Ingredients:
- 5lbs chicken (legs and thighs)
- 3 ⅓ tsp Chinese five spice powder
- 2 tbsp Eunicefoods green seasoning
- 2 tsp chili garlic sauce (sambal oelek)
- 1 ½ tbsp dark brown sugar
- 2 tbsp dark soy sauce
- 1 ½ tbsp light soy sauce or tamari
- 1 tbsp rice wine vinegar
- 1 tbsp sesame oil
- 2 tsp tomato paste
- 2 tsp grated fresh ginger
- ½ tsp salt
- ¼ tsp black pepper
- Dash of cinnamon
Instructions:
- Clean the chicken, remove excess fat and skin, and wash and pat dry. Place the chicken in a large mixing bowl.
- Make the Eunicefoods green seasoning. Use 2 tbsp of the green seasoning for this marinade and reserve the remainder for later use.
- Add all the ingredients to the chicken and massage the marinade into the chicken. Let marinate for a minimum of 1 hour or overnight.
- Preheat the oven to 375 degrees F.
- Place the chicken on a metal baking sheet (you can line it with foil). Cover the chicken with foil for 20 minutes. Remove the foil and baste the chicken. Continue to cook uncovered for about 40 additional minutes or until the thermometer reads 165 degrees F internally.
- Baste the chicken frequently. When the chicken is almost done, during the last five minutes, turn on the broiler to 500 degrees F. Broil the chicken for 5 minutes.
- Baste the chicken with the remaining juices and serve. Enjoy!
