To cook Jamaican brown stew chicken, follow these steps:

  1. Clean and wash the chicken pieces with vinegar and lemon.
  2. Season the chicken and the sauce, and let everything marinate for 5-10 minutes or overnight in the refrigerator.
  3. In a deep skillet or pot over medium-high heat, add olive oil and sauté the chopped onions and garlic until fragrant and translucent.
  4. Add the marinated chicken and cook on each side until seared, about 3-4 minutes per side.
  5. Add the carrots, brown sugar, tomato sauce, and chicken stock to the skillet and stir everything together until combined. Let the mixture boil for a minute.
